I have not done this, but plan to. It should be a pretty easy project. You can use the top mount design for the cables as envisioned by Bo aside, or go through the hull.
Can you convert the foot tracks to steering foot tracks for a Torqeedo? Is there an easy upgrade than can be made? RS 117
Would like to mount a Torqeedo on the back of my RS117 and steer with my feet. Can an easy foot braces update be made? Sea-lect Designs makes a steering foot brace, but I am not sure if that will work on the RS117.
